بررسی تغییرات غلظت اسیدهای آمینه ضروری و غیرضروری ماهی آمور (Ctenopharyngodon idella) در طول و وزن های مختلف

چکیده مقاله :
ماهی کپور علفخوار یا ماهی آمور یکی از مهم ترین ماهیان گرمابی محسوب می گردد و اهمیت ویژه ای را در سبد غذایی مردم دارا می باشد. اسیدهای آمینه، اغلب به عنوان زنجیرههای ساخت پروتئین شناخته میشوند و ترکیباتی هستند که نقش بسیار مهمی در بدن موجودات زنده ایفا میکنند. تحقیق حاضر به منظور تعیین غلظت اسیدهای آمینه ضروری و غیرضروری فیله ماهی آمور (Ctenopharyngodon idella) انجام پذیرفت. گروه بندی شامل گروه های وزنی 20، 100 و 500 گرمی و نیز گروههای طولی 10، 22 و 35 سانتیمتری بودند. ترکیب اسیدهای آمینه ضروری و غیرضروری بر اساس روش Bidlingmeyer و همکاران (1984) اندازه گیری شدند. تجزیه و تحلیل داده ها به کمک نرم افزار SPSS19 و آنالیز واریانس یکطرفه و آزمون دانکن انجام و وجود یا عدم وجود اختلاف معنی دار در سطح 95 درصد تعیین گردید. نتایج آنالیز اسیدهای آمینه نشان داد مقدار اسیدهای آمینه ضروری فیله ماهی آمور شامل: آرژنین، هیستیدین، لوسین، متیونین، ترونین، لیزین، فنیل آلانین و والین در وزن ها و طول های مختلف با یکدیگر اختلاف معنی داری نداشت (05/0 p >). همچنین بر طبق نتایج مشخص گردید مقدار اسیدهای آمینه غیرضروری شامل: آسپارتیک اسید، گلوتین، سرین، گلایسین، آلانین، پرولین، تیروزین و سیستین در وزن ها و طول های مختلف با یکدیگر اختلاف معنی داری نداشت (05/0 p >). نتایج بررسی حاضر نشان داد در ماهی آمور طول و وزن بر میزان اسیدهای آمینه تاثیر معنی داری نداشت.
چکیده انگلیسی:
Grass carp or Amur fish is considered one of the most important tropical fish and has a special importance in people's food basket. Amino acids are often known as protein building chains and are compounds that play a very important role in the body of living organisms. The present research was conducted to determine the concentration of essential and non-essential amino acids in Amur fish (Ctenopharyngodon idella) fillet. The grouping included weight groups of 20, 100 and 500 grams and length groups of 10, 22 and 35 cm. The composition of essential and non-essential amino acids was measured according to the method of Bidlingmeyer et al. (1984). Data analysis was done with the help of SPSS19 software and one-way analysis of variance and Duncan's test and the presence or absence of significant difference was determined at the 95% level. The results of amino acids analysis showed that the amount of essential amino acids in Amur fish fillet including: arginine, histidine, leucine, methionine, threonine, lysine, phenylalanine and valine in different weights and lengths did not differ significantly from each other (p > 0.05). Also, according to the results, it was determined that the amount of non-essential amino acids including: aspartic acid, gluten, serine, glycine, alanine, proline, tyrosine and cystine in different weights and lengths was not significantly different from each other (p > 0.05). The results of this study showed that length and weight had no significant effect on the amount of amino acids in Amur fish.
