The present study has been carried out with the objective of prolonging the shelf life of chicken meat by using gelatin-chitosan (GC) film containing different concentrations of Cinnamon zeylanicum essential oil (CZEO) (0, 0.3, 0.6, and 0.9% v/v) at the refrigerated condition for 12 days. The obtained results indicated that the microbial count of samples wrapped with the films incorporated with the CZEO was significantly lower than control and remained below the acceptable limit of meat (7 log CFU/g). The total volatile base nitrogen (TVB-N) was 7.11 mg/100 g and after 6 days reached 30.18 mg/100 g in control, whereas it was lower than 25 mg/100 g for samples wrapped with GC films containing 0.6% and 0.9% CZEO. Compared with the control sample, the levels of peroxide value (POV) of the wrapped samples with GC films incorporated CZEO at 0.3%, 0.6 and 0.9% were decreased by 2.07, 3.23, and 3.4 meq peroxide oxygen/1000 g lipid, respectively, at the end of storage time. As a result, the integration of CZEO into GC film can extend the shelf life of the chicken meat in refrigerated conditions for at least 12 days without any unfavorable organoleptic properties Manuscript profile -

The disease first started in Wuhan, Hubei Province, China, and then quickly spread to more than 200 countries. In March 2020, the World Health Organization announced the outbreak of the disease as a global epidemic, and it is a great challenge that has affected all nations. Initially, governments in various countries, to prevent the spread of this disease, took stubborn measures, including complete lockdown. It seems that little attention has been paid to food hygiene and its association with the coronavirus disease (COVID-19) pandemic. Transmission risk of SARS-CoV-2 is possible through food department staff to food products and food contact surfaces. Recently, cases of survival of SARS-CoV 2 through various surfaces have been reported. The possibility of transmission and survival of SARS-CoV2 via food is discussed based on previous information for other respiratory viruses such as MERS-CoV and SARS-CoV. Nevertheless, studies are needed to survey the possibility of its transmission and survival via food. In the face of challenges such as the current epidemic, the flexibility of a system such as the food industry is critical to protecting producers' and consumers' health to reduce the risk of outbreaks by implementing new approaches. 3 - نانوکپسولاسیون عصاره چای سبز بهروش Thin film layer و ویژگی آنتیاکسیدانی و ضدمیکروبی آنFood Hygiene , Issue 2 , Year , Autumn 2016استفاده از ترکیبات طبیعی از جمله عصاره چای سبز در آمادهسازی مواد غذایی و صنایع داروسازی محدود میباشد.کپسولاسیون مواد در نانولیپوزوم ها می تواند بهعنوان یک سیستم محافظتی از ترکیبات طبیعی در طی فرآوری و نگهداری آنها مورد استفاده قرار گیرد. در این مطالعه خصوصیات فیزیک Moreاستفاده از ترکیبات طبیعی از جمله عصاره چای سبز در آمادهسازی مواد غذایی و صنایع داروسازی محدود میباشد.کپسولاسیون مواد در نانولیپوزوم ها می تواند بهعنوان یک سیستم محافظتی از ترکیبات طبیعی در طی فرآوری و نگهداری آنها مورد استفاده قرار گیرد. در این مطالعه خصوصیات فیزیکوشیمیایی نانولیپوزوم عصاره چای سبز و همچنین محتوای فنولی، فعالیت آنتیاکسیدانی و ضدمیکروبی آن مورد بررسی قرار گرفت. فعالیت آنتیاکسیدانی با روش DPPH و خاصیت ضدمیکروبی به روش چاهک بر علیه باکتریهای باسیلوس سرئوس، سالمونلا تیفی موریوم138 فاژتایپ 2، اشریشیا کولای O157:H7 و لیستریا مونوسایتوژنز تعیین شد. میانگین قطر نانولیپوزومها حدود 9/1 ± 7/44 نانومتر و شاخص پلیدیسپرسیتی 014/0± 203/0بود. بازده محصورسازی نانولیپوزوم چای سبز تحت شرایط بهینه 97٪ بهدست آمد. فعالیت ضدمیکروبی عصاره چای سبز بهطور معنیداری پس از کپسوله کردن در نانولیپوزوم افزایش یافت (05/0P<). بیشترین فعالیت ضد میکروبی نانولیپوزوم چای سبز مربوط به باکتری لیستریا مونوسیتوژنز با منطقه مهار رشد 2/16 میلیمتر بود، درحالیکه باکتری اشریشیا کولای با هاله عدمرشد 14 میلیمتری مقاومترین باکتری شناسایی شد. علاوهبر این، فعالیت آنتیاکسیدانی عصاره آبی چای سبز پس از کپسولاسیون در نانولیپوزوم بهطور معنیداری افزایش داشت (05/0P<). بهطوری که میزان IC50 آن به 78/1میکروگرم در میلیلیتر کاهش یافت. براساس یافتههای این تحقیق میتوان گفت که نانوکپسولاسیون بهطور مؤثری تأثیرات مفید عصاره چای سبز از جمله خواص ضدمیکروبی و فعالیتهای آنتیاکسیدانی آن را افزایش میدهد. لذا جهت افزایش پایداری ترکیبات طبیعی در طی فرایندهای مختلف پیشنهاد میگردد. 4 - اثر ضد میکروبی آویشن شیرازی بر روی E.coli O157:H7 درگوشت چرخکرده گوساله در طی نگهداری در یخچال (سردخانه)Food Hygiene , Issue 1 , Year , Summer 2011هدف از مطالعه حاضر، تعیین اثر اسانس آویشن شیرازی بر روی رشد باکتری E.coli O157:H7درگوشت چرخکرده متأثر از غلظتهای مختلف (صفر، 005/0، 015/0 و03/0 درصد) آویشن شیرازی در درجه حرارتهای 4 و10 درجه سلسیوس در مدت 14 روز است. در همه غلظتهای فوق خواص حسی قابلقبولی مشاهده گرد Moreهدف از مطالعه حاضر، تعیین اثر اسانس آویشن شیرازی بر روی رشد باکتری E.coli O157:H7درگوشت چرخکرده متأثر از غلظتهای مختلف (صفر، 005/0، 015/0 و03/0 درصد) آویشن شیرازی در درجه حرارتهای 4 و10 درجه سلسیوس در مدت 14 روز است. در همه غلظتهای فوق خواص حسی قابلقبولی مشاهده گردید. در غلظت 03/0 درصد اثر ضدباکتریایی قوی مشاهده گردید. ضریب همبستگی غلظت اسانس آویشن شیرازی با لگاریتم تعداد باکتری مورد مطالعه در دماهای 4 و10 درجه سلسیوس بهترتیب 701/0– و 599/0 – بود، که نشان میدهد با افزایش غلظت اسانس، میزان رشد باکتری در طی دوره نگهداری کاهش مییابد و از نظر آماری اثر اسانس بر روی رشد باکتری معنیدار بود (01/0> p). یافتههای این مطالعه نشاندهنده این است که جمعیت باکتری E.coli O157:H7 در گوشت چرخکرده تیمارشده با غلظتهای مختلف اسانس آویشن شیرازی نگهداریشده در دمای 4 درجه سانتیگراد کاهش بیشتری نسبت به نمونههای نگهداریشده در دمای 10 درجه سانتیگراد (دمای یخچالی نامناسب) داشتند که این مسأله نشاندهنده نقش مفید نگهداری در شرایط سرد میباشد. The MIC of T. ammi essential oil alone against the studied bacteria was as follows: E. coli (1000 ppm), S. typhimurium (2000 ppm), L. monocytogenes (1000 ppm), B. cereus (2000 ppm), and S. aureus (2000 ppm). On the other hand, the MIC of L. officinalis alone against the studied bacteria was higher: E. coli (>4000 ppm), S. typhimurium (>4000 ppm), L. monocytogenes (1000 ppm), B. cereus (1000 ppm), and S. aureus (2000 ppm). Interestingly, the combined effect of T. ammi and L. officinalis EOs demonstrated that a combination of 500 ppm T. ammi EO and 1000 ppm L. officinalis EO could effectively inhibit the growth of E. coli. Similarly, a combination of 500 ppm T. ammi EO with 500 ppm L. officinalis EO and 125 ppm T. ammi EO with 1000 ppm L. officinalis EO effectively inhibited the growth of S. aureus. Furthermore, the combined MIC values for specific bacteria were 1000 ppm T. ammi EO with 3000 ppm L. officinalis EO for Salmonella typhimurium, 500 ppm T. ammi EO with 500 ppm L. officinalis EO for L. monocytogenes, and 1000 ppm T. ammi EO with 500 ppm L. officinalis EO for Bacillus cereus. Overall, the combination of these two essential oils led to an increase in the lag phase and a decrease in the growth rate of the target bacteria, which is significant in food microbiology. In conclusion, the study highlights the importance of the combination application of T. ammi and L. officinalis EOs as natural antimicrobial agents in food safety. Manuscript profile
