تأثیر صمغ دانه خرنوب بر کاهش دو فاز شدن و ویژگیهای فیزیکوشیمیایی، رئولوژیکی و حسی دوغ

مقدمه: امروزه به دلیل افزایش آگاهی مردم از زیان های مصرف نوشابه های گازدار، تمایل به مصرف نوشیدنی های طبیعی از جمله دوغ رو به افزایش است، ولی با وجود رعایت استانداردهای بهداشتی، ویژگی های حسی و ظاهری این محصول چندان مورد توجه قرار نگرفته است. یکی از مشکلات اصلی در نوشیدنی دوغ دو فاز شدن می باشد که به دلیل وجود شرایط اسیدی، پروتئین های کازئین ماست جمع شده و رسوب نموده در نهایت ظاهری نامطلوب در آن ایجاد می نمایند. جهت جلوگیری از این مشکل می توان از هیدروکلوئیدها استفاده نمود که در این پژوهش مورد بررسی قرار گرفته است.مواد و روش ها: در این پژوهش، پس از افزودن صمغ دانه خرنوب در چهار سطح 1/0، 15/0، 2/0 و 25/0 درصد به دوغ، ویژگی های فیزیکوشیمیایی، رئولوژیکی، انرژی فعال سازی، پتانسیل زتا، دو فاز شدن و خصوصیات ارگانولپتیکی این محصول مورد بررسی قرار گرفت.یافته ها: پتانسیل زتا در نمونه های دوغ به ترتیب از mV96/17- تا 89/31- است. تغییر رفتار جریانی دوغ از نیوتنی به رقیق شونده با برش در طی افزودن صمغ دانه خرنوب مشاهده گردید و مدل ریاضی مناسب برای پیش گویی رفتار جریانی فرآورده تخمیری شیری پایدار شده با صمغ دانه خرنوب قانون توان بود. انرژی فعالسازی در نمونه های دوغ به ترتیب از kj/mol 82/13 تا 98/24 متغیر بود. بهترین نمونه از نظر ارزیابهای حسی مربوط به نمونه با غلظت 2/0 درصد صمغ دانه خرنوب گزارش شد.نتیجه گیری: استفاده از صمغ دانه خرنوب تاثیر مطلوبی بر ویژگی های فیزیکوشیمیایی، حسی و رئولوژیکی دوغ دارد.
